Teriyaki Rice Bowl Recipe

On Mothers Day this year we smoked a bunch of pork and had shredded pork for dinner. It was one of the yummiest dinners I have had in a long time. The only downside is that it made A LOT of meat. We have so much leftover.

I turned to the good ol FB asking of different ways to use the leftover meat because it was way too good to let go to waste. So many ideas were thrown out, and so far these Teriyaki Rice Bowl were the yummiest dinner we’ve had with it.

The recipe is really simple, and although we had it with our smoked shredded pork, you can substitute it with any other meat. It would be great with chicken, brisket, turkey or even some shredded beef. The possibilities are seriously endless.

The same thing goes for the vegetables. There are the “typical” vegetables that you see in a rice bowl, but the truth is you can go with whatever you have on hand. We had the typical ones on hand; broccoli, carrots and zucchini.

I sliced the zucchini into thin slices, grated the carrots and then made sure the broccoli florets were small and bite sized. I then steamed the vegetables until they started to get soft. Leave a little crunch, don’t make the veggies too soft. The crunch gives a little something extra to the combination of the bowl.

Teriyaki Rice Bowl

  • 2 cups Steamed Veggies Whatever you have on hand
  • 2 cups Shredded Meat of Choice
  • 4 cups Rice cooked
  • sesame seeds optional

Teriyaki Sauce

  • 1/2 cup soy sauce
  • 2 tbsp Hoisin Sauce
  • 1 tbs rice vinegar
  • 2 tbsp minced garlic
  • 1 tbsp ground ginger
  • 2 tbsp brown sugar
  • 1 tbsp grandulated sugar
  • 1 tsp olive oil

Instructions

  • Cook rice according to the package instructions
  • Steam vegetables of choice and set aside.

Make Homemade Teriyaki Sauce

  • Warm olive oil in a small saucepan over medium heat.
  • Add garlic and ginger to saucepan and stir until fragrant (about 2 minutes)
  • Stir in remaining sauce ingredients (soy sauce, hoisin sauce, rice vinegar, sugars) and bring to a boil.
  • Remove from heat and let the sauce slightly thicken.

Assemble Rice Bowl

  • Put 1 cup of rice in a bowl
  • Put 1/2 cup of meat on top of the rice, and then 1/2 cup of veggies
  • Top the bowl off with 2 tablespoons of teriyaki sauce
  • If using sesame seeds, sprinkle a few on top of the rice bowl and serve.
