It’s SUMMERTIME!!!! The best season of all, because let’s be honest, family vacations, time by the pool, ice cream cones and picnics at the park are the best. Prepaid Visa® RushCard and Visa Clear Prepaid are sponsoring today’s updated post as we talk about some other fantastic reasons I LOVE Summer!
My favorite holiday of the year is 4th of July. I know, not Christmas. How dare I?! But seriously, I love the memories, carnivals, BBQs and parades all coming to a close with a big firework show. How do you beat that?! Well today I’m sharing a perfect treat that you can take with you to a neighborhood BBQ or even in a plastic snackbag to munch on at the fireworks. It’s the perfect combination of salty, sweet and citrus all rolled into fabulous treat. It’s the best lemon popcorn recipe EVER!
Amazing Lemon White Chocolate Popcorn
Ingredients
2 bags of microwave popcorn
1 1/2 cups white chocolate chips
1 large lemon
Instructions
Pop both bags of microwave popcorn, and put into a LARGE mixing bowl (make sure there’s still room to mix) after removing as many unpopped kernels as you can.
Slowly melt the white chocolate chips at 30 second increments in the microwave, and at half power. Stir in between each increment until fully melted and smooth.
Pour 1/2 of the chocolate over the popcorn and stir well. Then pour the other half and continue to stir until all kernels are covered.
Pour out onto parchment paper and lay the popcorn out into a single layer.
Zest the lemon before slicing it open (you’ll need about 2-3 Tablespoons). Immediately put 1/2 of the zest over the top of the popcorn while the chocolate is still wet. Mix/turn over the popcorn and sprinkle the remaining zest over the popcorn. Then squeeze 1/2 of the lemon onto the popcorn immediately.
Let the popcorn sit and “harden” for about an hour, and then mix/break it up. Squeeze the remaining 1/2 of the lemon onto the popcorn again. Let finish drying/hardening and serve.
Store in an airtight container, but popcorn is best eaten by 24-48 hours after making it.
Not only can you take this to the neighborhood BBQ, but it can also be a fabulous road trip snack. Make it ahead of time, throw it in a bag and take it in the car with you!
And another thing that makes the perfect road trip companion is the Prepaid Visa® RushCard. It makes it easier to manage your money, so the only thing you have to think about while you’re out is having fun. This is such a great idea, I never would have thought about lemon flavored popcorn!
Tasted delicious! However, my white chocolate chips never melted to the “drizzling” point….I used Gharadelli white chocolate chips, melted in the microwave according to the recipe. The chips melted, but not to the point where they were fluid enoug to pour. Any pointers? Thanks!!
Denise, I have had problems too depending on the type of bowl that I used as well as what I stir it with. Make sure to put your microwave on a medium heat and try using a glass bowl with a plastic spatula to stir. Those are the combinations that I have found work the best for me. Otherwise it gets more clumpy from too much heat before it fully melts.
Hi Vanessa. Just ran across this recipe and can’t wait to try it! Is Homestyle popcorn a brand of popcorn? If so, how many oz is it? I’ll need to substitute as I’ve not seen that brand before.
Thanks!
Teri, homestyle isn’t a brand, it’s the flavor of it. I usually buy it in Pop Secret brand. It’s a salty flavor rather than the traditional buttery people usually buy.
This looks so good! I’m planning to make this with already popped popcorn, about how many cups of popcorn would I need?
I would say between 6-8 cups of popped popcorn.
What a fun treat! We love flavored popcorn, so we are going to have to try this. Pinning to make!
I have never seen popcorn made like that before. I thinking it must taste awesome. Thanks for sharing it on #HomeMattersParty
Kathleen

LOVE this popcorn!! Thank you so much! I see this being made many a more times:)
What do you do to keep the Popcorn from getting stale?
I’ve made several variations all good. But they stale before the day is over
