This recipe is probably one of the most requested from my kids. It makes a frequent appearance on our menu, and I don’t mind because it’s a quick meal to prepare and will be a guaranteed easy meal time (no kids telling me their full with a full plate still to eat!).
Chicken Chow Mein
- 1 lb chicken breast – cubed
- 16 oz angel hair noodles
- 1/2 head of cabbage – chopped
- 2-3 carrots shredded
- 1 Tablespoon oil
- 1 teaspoon ground ginger
- 1 teaspoon minced garlic
- salt & pepper
- 1 teaspoon sesame oil
- 1/4 cup soy sauce
- 1 Tablespoon sugar
Boil the noodles according to their package. Drain, drizzle with a little oil to avoid sticking and set aside.
Put the oil, ginger and garlic in the bottom of a large pan. Heat to a medium heat, and then add the cubed chicken. Cook over medium heat until the chicken is cooked all the way through; stirring/flipping frequently. Once the chicken is fully cooked, add in the cabbage and carrots. Cover the pan with a lid and let the veggies steam until tender.
Stir together the sesame oil, soy sauce and sugar in a small bowl. Add the cooked noodles to the chicken/veggie mixture and top with the sauce. Stir until well incorporated. If you want, top with sesame seeds. Serve immediately!
