Instant Pot Potato Soup

Its been cold and snowy for weeks now, and all I want to eat is delicious soup. But right now my life is so busy that I don’t have time to spend making dinner, let alone let a soup simmer and soak in the flavors. So I decided to try making my first soup in the Instant Pot Pressure Cooker; and it was AMAZING!! So of course I needed to share!

Potato Soup in the Instant Pot

  • 1/2 Small Onion – diced
  • 1 tablespoon Butter
  • 4 Large Potatoes – peeled and cut small
  • 2 – 14 oz cans of Chicken Broth
  • 4 oz Cream Cheese
  • 1 cup Cheddar Cheese – grated
  • 2 cups Milk
  • 1 1/2 cups Frozen Corn
  • 2-3 tablespoons Corn Starch
  • 2 tablespoons water
  • Seasonings: salt & pepper, parsley, dried red peppers (optional for a slight kick) to taste
  • Bacon – crispy 

Start with your instant pot on the “sauté” feature and put the butter and onion in the bottom of your pan. Cook until the onion is translucent, stirring constantly. Then turn the saute off and put 1 can of chicken broth and seasonings into the bottom with the onion. Place the cut up potatoes into a steaming basket if you have one, or a metal strainer into the pot, to keep it out of the liquid.

Cook on high for 5 minutes, then let it natural pressure release for 5 minutes before doing a manual release.

Remove the basket of potatoes and set aside. Put the second can of chicken broth, cheddar cheese, cream cheese, milk and corn into the soup and stir. Turn the saute feature back on and heat the liquid up while you prep your corn starch. Combine your corn starch and water in a small cup and then mix into the liquid. return the potatoes to the IP and continue to stir constantly (don’t let that milk scorch on the bottom!) until the soup is heated thoroughly. 

Top the soup with crumbled up bacon and serve!!!

This was so good that my son who fought me the whole time I was making it (because he HATES potatoes, or so he says) had 3 servings of the soup. He actually asked for a 4th but I cut him off so that I would have some for lunch the next day!
