Macro Friendly Strawberry Protein Pancakes for breakfast
A few weeks ago I shared this recipe on IG stories, and I’ve had the recipe on repeat for either breakfast or lunch ever since. It is my favorite because it doesn’t “taste healthy”. It truly is a treat whenever I get to eat it. It’s also a comfort meal. Often when you think of a macro friendly breakfast you think of either a protein shake or egg whites. It’s not often you get to enjoy a hot breakfast of pancakes!
I came up with the recipe because when we went to a family reunion, we made dozens of pancakes and waffles and smothered them in strawberries and whipped cream. Not only was it delicious…it was very full of carbs and fat.
So when I got home, I knew I wanted to have more but I also wanted to make them fit into my macros. Who knew that would be as easy…and delicious?!
I love using Kodiak Cakes because it is already packed with protein, but adding in more is always a good choice! Using egg whites (leaving out the yokes to eliminate fat) and protein powder ups your protein per pancake.
Strawberry Protein Pancakes
- 1 cup Cinnamon Oak Kodiak Cakes Mix
- 3 tbsp liquid egg whites
- 1 scoop vanilla Clean Simple Eats protein powder
- 3/4 cup water
- Strawberries
- Whipped Cream
Instructions
- In a mixing bowl, combined Kodiak Cakes mix, egg whites, protein powder and water.
- Stir until well combined.
- Cook in a large skillet into 6 equal sized pancakes
- Top each pancake with strawberries and whipped cream
