These protein pancake bites are a delicious grab and go snack idea to curb your sweet tooth while still hitting your macros for the day. Eat as a snack or an easy breakfast.

Protein Pancake Bites
Some days I crave a snack and it just won’t fit into my Macros for the day. So today I decided I would make some grab and go snacks that I can keep on hand, that won’t break the macro bank! These Peanut Butter Cup Protein Pancake Bites fit that bill, and also curb my sweet tooth at the same time!!
Protein Pancake Bites – Peanut Butter Cup
Materials
- 1 1/3 cups Kodiak Cakes Buttermilk Mix
- 1/3 cup Silk Almond Milk
- 2 scoops Clean Simple Eats Vanilla Protein Powder
- 1/4 cup PB Fit Powder
- 1/3 cup liquid egg whites
- 1/2 cup Stevia
- 1 tsp Vanilla
- 2 tbsp water
- 24 Guittard Milk Chocolate Baking Chips
Instructions
- Preheat oven to 350*
- Combine all ingredients excluding chocolate chips into a large mixing bowl. Stir until smooth
- Spray mini cupcake pan, or place cupcake liners.
- Fill each cup fully, equally intol 24 cups
- Bake at 350* for 9 minutes
- Immediately after removing from the oven, push a chocolate chip (point side down) into each cup. One chip per cup.
- Remove from baking sheet and let cool.
- Store in the refridgerator in an air tight container up to a week. Reheat in the microwave for 10 seconds before eating for a warm treat!
