Campfire Pizza Pockets recipe

It’s camping season and I am SOOOOO excited! We are going to de-winterize the trailer this weekend (is that the right wording?!) and get it all ready to take out for our Summertime adventures. I am already stocking the cupboards with snacks and all the non-perishables that we will use this season, and getting some food plans figured out for the many last minute campouts we will have!

The food is one of the best parts of camping, but let’s be honest, it can also be one of the most stressful for the person in charge of planning it all. So over the next few weeks/months I will be sharing some of our favorite camping foods that can be cooked while out in the middle of nowhere, or over the backyard campfire. 

Today’s is perfect for an easy lunch or can be used for a quick dinner while camping too. We made ours over the grill in our yard (because sometimes you need to mix up the typical Summertime PB&J) but you can do it over a charcoal pile on the floor or a camp fire as well!

First let’s talk about how we started our grill. We piled a bunch of briquettes into the grill, about 15 or so, and then plugged in our HomeRight ElectroLight fire starter. This starter will light your briquettes in 2-3 minutes and have them sparking and heating up within seconds. Once things were starting to heat up, we closed the lid on the grill and let them heat up even more while we prepped our sandwiches. 

This ElectroLight will be a game changer for us this Summer. We cookout in the backyard as well as camping ALL THE TIME, and being able to trust this to start our fires without any lighter fluid or open flames like a match or torch will be awesome!

Pizza Pockets

Ingredients 

  • Bread
  • Pizza Sauce
  • Pizza Toppings of your choice
  • Mozzarella cheese
  • Butter

These Pizza Pocket Sandwiches can be cooked over an open fire, or grill. They are great for a backyard cookout or while camping! Can't wait to have these this Summer.

We spread all the ingredients out on a table and butter one side of 2 slices of bread. These will be the OUTSIDE of the sandwich (like a grilled cheese). Put one piece of bread with the butter face down in the sandwich grilling stick and then spread some pizza sauce on top. Then top your piece of bread with your favorite pizza toppings. Then a small layer of cheese to finish off the pizza.

Next, place the second piece of bread on top with the butter side up. Close your sandwich grilling stick and toast over you charcoals or open fire until golden brown. You can open the sandwich stick occasionally to check if it’s golden or not.

We cut our pockets in half to slightly cool off the toppings a bit before serving/eating!
