A few weeks ago, St George Utah hosted the Senior Olympic Games, which meant that my parents and grandparents came into town (yup, they are that old!). We had so much fun having them close, because it’s been a hard 3 months being away from all of them since our move. We spent everyday playing, swimming, shopping and just hanging out in the nice weather. But it did make me super sad, because I quickly realized that I wont be around family for the holiday’s this year, and it will be our first time spending them just the 4 of us. So I knew we had to have a small dinner party for all the family in town, and play, laugh and of course eat just like we would on Thanksgiving if we were all together.
I planned the dinner party for Thursday night, because it was the only time someone wasn’t working, golfing, or had other dinner plans. That morning we headed over to my parents hotel to do the same we had been all week. PLAY! We spent all morning and most of the afternoon at their house, until I realized it was now 3 pm, we were 30 minutes from home, I still needed to shop and we were having the dinner party at 6. Oops!
But I ran to Walmart and bought my lifesaver, Land O Lakes Saute Express® Saute Starter. Seriously, this new product has since become a staple for so many dinners in our house, but this particular night it saved the day. I had planned on making a build your own lettuce wrap dinner. A few sides and then all the makings of a yummy lettuce wrap.
Well, I hadn’t marinated any meat, I still had the veggies to cook and no time to really add flavor to anything. I knew I would be making the dressings which would add flavor, but I couldn’t rely on just that. So I grabbed the Garlic & Herb butter and used it for both the chicken as well as saute’d the veggies in it!

Melt 2 Saute Express® Saute Starters in a large pan over medium heat. While melting, cut your chicken breasts into thin strips. Add chicken to the melted butter and stir until fully coated. Cover and let the meat saute until fully cooked thru (time varies depending on chicken thickness), stirring often. Once fully cooked, remove from heat and shred.
In the same pan, melt 1 Saute Express® Saute Starter over medium heat. Once melted, add mushrooms, onions and carrots into the butter and mix until evenly coated. Cover and saute until carrots are soft to the touch.
Wash butter lettuce and pat dry with a paper towel.
Serve chicken and veggies on one leaf of lettuce, and top with choice of dressing and nuts

Just place the warm chicken into the bowl with the mixing attachment, turn on low and the chicken will shred in just a few seconds. Do not mix too long, the chicken will get mushy!
I served these with both my party pleasing potato salad and fruit salad. Both were a huge hit, but nothing like the lettuce wraps.

We had so much fun together. Seriously like it was a holiday itself! And what more do you need than family (and some crazy little kids) to keep you laughing and on your toes all night. We played thumb wars, horse rides, and of course the hand game (where you try to knock the other person over!). It was so fun to watch Will try to push over Grandpa!!!
And someone please tell me that I’m not the only one who’s kitchen looks like this (above) when they are done cooking for a dinner party. Oiy, I’m lucky I even had dishes for people to eat on!
It was seriously amazing to be able to spend time with my family since we wont be able to for Thanksgiving. And it was even better because I didn’t have to stress or worry about the meal all thanks to Saute Express® Saute Starters. Have you tried them yet? if not, you NEED to!
