We may have reverted back to the cold and wet weather here in Utah, but I’m not about to give up my hope of warm weather, playing at the park, and running around at the splash pad. I know it will come, and last night we ate like it was here with out Chicken Lettuce Wraps (if you will it, maybe it will happen sooner?).
We were out shopping for clothes for my SNAP conference next week, when I realized that we still had half of our errands to run, and it was 4:00 already. The kids bed time was in just 3 hours. So while we were at the store I grabbed some of the Tyson Refrigerated Chicken and a bunch of vegies, and hurried home. (see more photos from our shopping trip here)
I was still putting groceries away when The Little Man grabbed the Chicken, ripped it open and started munching on it. Hmm, maybe I shouldn’t go out for 5 hours without snacks for the kids anymore. But at least I know they are great to eat straight from the bag.
This is the EASIEST meal that you can make both at home for your family, or take on the go. Who wouldn’t love to pull out this amazing wrap to eat while your friends are the ones pulling out that greasy take out for their kids.
- Tyson Grilled & Ready Southwestern Chicken
- Butter Lettuce
- Chopped or Shredded Carrots
- Chopped Cucumber
- Canned Pineapple
- Asian Toasted Sesame dressing
- Chopped Pecans

We will be making this a ton this summer, and bringing it to the park with us for play dates. Also, I will be making it into a salad by just throwing it into a bowl with shredded lettuce and the dressing on the side. I am a sure sucker for salads, almost as much as wraps.
Now can we just have another great day like the one above, so we can go to the park again?

This looks so simple and amazing!! Love that it has veggies in it too and not just lettuce. My kids would love it.
My kids loved it! They may have eaten it piece by piece instead of as a whole, but they still loved all the bits of it as well as the yummy dressing!
