I found the most amazing green mint chocolate chips the other day at the store, and knew that I had to make something with them (before I just ate them all out of the bag!). On Sunday we have a big family Christmas dinner, so I figured I would make a treat to hand out to all of the families along with out Christmas cards.

I figured that I couldn’t be the only person who needed a last minute sweet treat for their holiday parties, so here’s the easy peasy recipe for you all as well. Also, this would make an amazing treat for your late night festivities on New Years Eve!

Last year I shared my white chocolate popcorn (and my cupids mix), and that’s where the inspiration came for this treat. I didn’t have Home style Popcorn around, so I just went with the buttered. But I really do love the butter and mint flavor together. They just work!

Green Mint Popcorn

Cook Time: 0 minutes
 
Ingredients (8 servings)
  • 2 bags butter popcorn
  • 1/4 cup green mint chips
Instructions
Pop both bags of popcorn, and place in a large bowl, eliminating as many un-popped kernels as possible.
Place the mint chips in a microwave safe bowl, and heat for 25 second at a time, stirring in between each interval, until fully melted.
Pour the mint chocolate evenly over the top of the popcorn and mix until fully covering all the popcorn.
Let the chocolate cool and set up before serving or packaging.
