You know my 3 ingredient fudges that I’ve shared? Well I thought that I would give a pumpkin one a shot this year. It was so good, but never set up like a fudge. It stayed more pudding like consistency. So what could I do with this yummy concoction? I had this vanilla pudding on hand and I put two and two together…literally!
- 1 bag white chocolate chips
- 1 can sweet & condensed milk
- ½ can pumpkin puree
- Vanilla pudding
- start making the pumpkin layer by melting the whole bag of white chocolate chips in a double broiler or in 30 second increments in the microwave. Once melted mix the sweet & condensed milk and pumpkin puree into the chocolate until all incorporated.
- Layer the vanilla pudding and pumpkin fudge in a parfait cup, top with whipped cream and shave some chocolate over the top or put sprinkles on top.
This is such a fun way to not have pumpkin pie, but still have the pumpkin at your festivities. Also, they are simple, small and when prepped ahead of time you won’t have to worry about any serving at the party.
