*I was sent an Ice Cream maker from Hamilon Beach so that I could share this recipe!
The other day, I got some fun Happy Mail. There couldn’t have been better timing, as we are moving to a MUCH hotter city than we are used to. Hamilton Beach sent me one of their 1.5 quart Ice Cream Maker’s to try out. We are IN LOVE. It’s been fun to try out new flavors and mix ins the last week. Today I’m gonna share one of the ones we tried, and The Little Man’s favorite flavor so far. And there’s more flavors coming your way as well!
Chocolate Mint Chunk Ice Cream:
(adapted from Hamilton Beach’s Chocolate Ice Cream recipe)
- 2 cups Heavy Whipping Cream
- 1 cup whole milk
- 1/2 cup sugar
- 1/4 cup cocoa powder
- 1 teaspoon vanilla
- 1/2 cup Andies Mint chips (found in the baking aisle)
Freeze the freezer bowl portion of the ice cream maker.
Combine whipping cream and milk in a saucepan and warm over medium heat. Once the mixture is warm, mix in the sugar, cocoa and vanilla. Stir until sugar is dissolved. Then cool overnight or until mixture is cold to the touch.
Set up the ice cream maker, and turn it on. Pour the chocolate mixture into the maker, and let freeze for 25-30 minutes. Then pour the mint chips into the maker and let it finish freezing.
Serve as a soft serve ice cream (so yummy) or put it in an air tight container, and put it back in your freezer over night and you will have a hard serve ice cream instead!
This was so divine. The perfect mix of chocolate and mint. Yum!
