Sometimes I have to make meals more interesting in order to get my kids to eat it. One day they love it, next day they don’t. So coming up with creative and new lunch ideas has become a part of my daily schedule. One of my favorite things we have is sandwiches full of veggies, but sometimes all the time the kids randomly don’t like sandwiches…even if they are shaped like a princess castle!

The most recent creative solution has been a hit because who doesn’t love everything bite sized, and rolled up, and pretty?!!!

We used Castle Wood Reserve® oven roasted chicken in our bites because the amazing flavor was exactly what we needed with all the veggies. It it fantastic rolled with the fresh flavors of the cucumbers and carrots. The meat is so versatile that you can use it for a great cheese and meat plate, but also a perfect addition to any quick lunch. It is a definite help for those like myself who are committing to making homemade meals but don’t want to be slaving away for hours to get a delicious taste. I love that it comes prepackaged in the deli area at Walmart so it’s a quick grab while doing my other shopping.

Oh and did I mention that it travels well too? I made these for my daughter and I at home, but they also travel well in a lunchbox for a lunch at school and my husband at work. One cucumber can get you around 15-20 bites!

I started the bites by laying a thin slice of cucumber down. To get the slice I used a veggie peeler, and just went all the way down the side of my cucumber to get the thin and long length.

After the cucumber was laid out, I placed the chicken breast, carrots, cheese and spinach on the left side, taking up about 1/3 of the length of the cucumber.

Then I started on the far left and rolled it up as tight as I could get it. Because of the wetness of the cucumber, it sticks to itself and holds the bite in place!

You can eat these by themselves, or serve them with a dressing for dipping. We picked an avocado cilantro dressing that was perfect with the freshness of the bites.
