Mini Taco Cupcakes

Last night I got a cooking/creative bug all at the same time. Why oh why does this happen when little babies aren’t feeling well? I decided to do an easy “experiment” in the kitchen that I could make while still holding Baby Girl Barker (by hold I mean put her in my amazing Okkatots carrier that she could stay content in all day long).

These were so yummy. I made 12 minis (the mini cupcake pan size) and we could have easily eaten many many more. I now know to make more than expected.
The next big game get together I will be making these. They were so simple to make, and easy to eat as a finger food.
Just place wonton wrappers into the cupcake tin, and fill with your choice of taco meats/beans. I used a dollop of refried beans and ground beef. I then topped them off with shredded cheese. Bake at 350 for 10 minutes (remember, times vary for each oven) until the cheese is all melted.
Once cooked, remove from the cupcake tin and top with your favorite taco toppings.

  • Olives
  • Tomatoes
  • Sour Cream
  • Salsa
  • Peppers
  • Onions
