Fall is in the air

Well, fall is officially here. And I couldn’t be happier!!
 
 
 
The weather is the most perfect it could ever be!
 
It has been down into the 50’s at night. So we have been sleeping with all the windows open and we keep the A.C. off all day. We haven’t had to turn it on for almost 2 weeks!
 
It has been up in the high 70’s to low 80’s during the day so we’ve still been able to play outside.
(I wish we lived where it was like this ALL YEAR LONG!)
 
But the best part of fall is BAKING! I love when the aroma fills my house, but most of all, I love to eat!
 
I have made a goal this fall and winter to make a bunch of new things. I really want to experience new foods, and there’s tons of them on my list.
 
But I wanted to start out mild…
so I took a banana bread recipe that I know I like, and switched things up!
 
Banana Chocolate Chip Muffins
(made for my husband’s breakfast this morning)
 
Preheat oven to 350*
 
sift together:
3/4 cup flour
1/4 tsp soda
2 tsp baking powder
1/2 tsp salt
 
then cream in 1/3 cup shortening
Add 2/3 cup sugar and mix
beat it 2 eggs
then add 1 cup mashed bananas.
Beat until smooth
slowly mix in 1/2-1 cup chocolate chips (depending on your chocolate preference!)
 
place liners in muffin tin and fill 2/3 way full. Bake for 19-21 minutes (varies by oven)
 
 
These are easy to make the night before. Place in the microwave for 10 seconds the next morning for a fresh-out-of-the-oven taste!
