I love time around the table or counter with the kids, and I feel like that time gets taken during the school year. So when it comes to breakfast I love to make something for the kids that we can all enjoy while gathered around the table before rushing out to our busy daily lives.
Crayola and Eggo is helping fuel mind and body this back to school season, and this breakfast idea definitely goes well with that motto! These breakfast kabobs are a favorite of mine for a few reasons. They are super easy to make, they are completely filling, and everyone in the family will eat them! That’s a definitely win in my book!!! We’ve also used these for after school snacks for the kids, and it’s an easy thing to prep while they are putting their backpacks away and pulling out homework. I also love to cut up a bunch of fruit and have it on hand in the fridge for snacks/meals which makes this an even easier idea. All I have to do is pull the Eggo’s out of the freezer, pop them in the toaster, and we have a delicious snack or breakfast in minutes!
Sometimes when I really feel ambitious, I make an AMAZING maple fruit dip to go with the kabobs, and the kids devour it. I do love to whip it up and let them have it from time to time.
Breakfast Kabobs
Ingredients:
- Eggo Waffles or Mini Pancakes of your choice
- Fruit of Choice – cubed into medium portions
- Long Wooden Skewers
Cut your fruit into medium sized (adult bite size) cubes. We like to use whatever fruit we have on hand, but a variety of colors alway looks great!
Toast your Eggo® in the toaster. We like to do a variation of waffles and mini pancakes and put them both on the kabob. Cut the waffles into 4 triangles to make smaller portions to skewer.
Layer your fruit and Eggo® onto the wooden skewer. I’m all about presentation, so I do a variety or colors by one another, mixing up fruits and waffle/pancake ratio!
Serve immediately alone, with a sprinkle of powdered sugar or with maple fruit dip (recipe below).
Maple Fruit Dip
Ingredients:
- 8 oz block Cream Cheese
- 1/4 cup Brown Sugar
- 2 Tablespoons Maple Syrup
In a medium sized bowl or kitchenaid, combine all 3 ingredients using beaters until fully combines and smooth. Chill until ready to serve. Store in air tight container in the fridge and stir well before serving.
Serve with fruit or a breakfast kabob.
