Are you a late night snacker? My husband and I are totally munchers after the kids go to bed. The thing that totally sucks is that we always go for the sweet/salty items which are completely unhealthy for us. So I decided that I needed to make us something that could give us the sense of fulfillment we needed for those late night snacks. And this is the easiest recipe ever!
Peanut Butter Oat Bites
- 1 1/2 cups quick oats
- 1/4 cup honey
- 1/4 cup unsweetened coconut shreds
- 1/2 cup Peanut Butter
- mini M&Ms (optional)
Combine all the ingredients in a bowl and stir until well incorporated. Once mixed, use a cookie scoop to separate into portions, then roll into a ball and place it on a parchment paper lined cookie sheet. Once they are all formed, place them in the fridge for an hour. Once cold, put them in an air tight container and store in the refrigerator.
