I’ve been playing around with a few different chex mix recipes and thrown in a few of my own ideas. This has been tweaked a few different times, before we finally landed on this final recipe. It turned out so amazing, and I couldn’t love it more. Its been great to munch on around the house this season, but it would also be an amazing last minute neighbor gift. Package it up in a cellophane bag, seal it with some cute washi tape and attach your holiday card. Simple yet so tasty!

Put cereal into a large, microwave safe, mixing bowl. In a separate bowl melt butter in the microwave for 30 seconds. Then stir in the sugar and corn syrup and return to the microwave for another 30 seconds. Mix in almond extract, then pour over the cereal. Mix until everything is fully coated. Return to the microwave for 1 minute. Stir and then return to the microwave for another 1 minute. Sprinkle the powdered sugar and white chocolate hot cocoa mix over cereal and mix until fully coated. Spread the cereal mixture on a lined cookie sheet, and sprinkle the peppermint candies over the top. Once cooled, store in an air tight container.
