I am a Peanut Buter lover. I love dinner, snacks, candy, and cookies if they involve peanut butter!!! And yes, I have been known to just sit and eat it by the spoonful! So when I found a delicious FLUFFY Peanut Butter Cookie recipe I knew that I had to share. It’s taken a little tweaking over time, but I feel like this is hitting the nail on the head!!!
Ingredients
- 1 1/3 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2/3 cup creamy peanut butter
- 1 egg
- 1 teaspoon vanilla
Combine the flour, baking soda and salt in a mixing bowl and set aside. In a large mixing bowl (or mixer) combine the butter and sugars and mix until creamy. Then add in the peanut butter, egg and vanilla and again stir until creamy. Then slowly add in the flour mixture just until incorporated. Do not over mix.
Using 1 tablespoon of dough at a time, roll it into a ball and place 2 inches apart on a parchment paper lined baking sheet. Bake at 350• for 9-10 minutes. For a softer cookie, go more towards less time. Remove cooked cookies from the baking sheet and place on a cooling rack.
Once cooled you have the option to drizzle some melted chocolate chips over the top. We do this from time to time! Store in an airtight container for up to 4 days.
These cookies are also great used as a thumbprint cookie. Before baking, push your thumb into the center of the dough ball creating a bowl like cookie. Once it’s cooked, there will be a little dip that you an fill with some delicious fruit spread of jelly!!
