Before this year, I didn’t like pumpkin treats. So each fall I would indulge in a plethora of apple baked goods. For some reason that has changed and I really enjoy pumpkin this year. So I completely surprised myself when I realized that this was the first apple dessert I have made this fall. But the incredible yumminess of it totally made up for the lack of it this year.
This caramel apple crisp bars can be served as either a regular crisp, warmed up and topped with ice cream and more caramel. But they can also be served cooled and cut into bars.

Place cubed apples into a large bowl. sprinkle cinnamon, nutmeg and flour over the top of the apples and mix until covered.
In a separate bowl, combine the butter, sugars oats and vanilla extract.Use a fork or pastry cutter to get all items well incorporated.
In a greased 8x8 pan, press 3/4 of the oat mixture into the bottom. Pour 1/2 cup caramel sauce over the oat mixture and then sprinkle the apple mixture over the top of that. Use the remaining 1/4 oat mixture to crumble on the top of the apples.
Bake at 350º for 30-40 minutes. Let it cool completely and then top with the remaining 1/4 cup caramel.
