Today I’m sharing a super simple and quick breakfast recipe. This is going to make life easier for those back to school days. You can make a bunch ahead of time and then either freeze or refrigerate them. Once you are ready to eat them, just pop a few in the microwave for 20 seconds (45-1 minute if frozen) and you’re kids will have a “hot” breakfast ready for them on those rushed mornings.
- 2 packages of biscuits (I used Walmart’s brand)
- 1/2 lb sausage
- 2-3 cups cheese
Spray the bottom of a cupcake tin with non-stick spray (you’ll need 2 pans or to cook them twice) and preheat the oven to 350. Place the biscuits in the bottom of the pan and then place the sausage on top of the biscuits; about 2 teaspoon worth. Then top with a sprinkle of cheese. Bake in the oven for 10-13 minutes (depending on your oven). Remove the biscuits promptly from the pan and let them cool 5 minutes on a cooling rack before serving. Serve warm
There’s so many different variations that you could do for these. Add some veggies, scramble some eggs and pour them on top, top with salsa and a million other ideas.
