My kids beg for funfetti cookies on a regular basis. They are their favorite, and I often switch between regular ones and the almond funfetti cookies I shared early this year. But since we are heading into the holidays I thought that it would be fun to do a holiday take on it…PEPPERMINT!!
Peppermint Funfetti Cookies
Ingredients:
- 1 box Funfetti Cake Mix
- 1/3 Cup Oil
- 2 Eggs
- 1/2 Teaspoon Vanilla
- 1/2 Teaspoon Peppermint Extract
- Holiday Sprinkles
- 2 Candy Canes
Directions:
Preheat the oven to 350•. Put the candy canes in a ziplock bag and crush them into small pieces.
Combine all ingredients in a large mixing bowl and mix until fully incorporated. Toss in a handful of holiday sprinkles and mix again.
Use a small cookie scoop or hand roll the dough into a small ball and place on a parchment lined cookie sheet. Sprinkle the top of the balls with the crushed up candy canes and some extra holiday sprinkles.
Bake in the oven for 8-9 minutes and once it comes out let cool on a cooling rack. Store in an airtight container once fully cooled.
Holiday cookies are great for a party, gift baskets for your friends, neighbor gifts and also just to have around the house to munch on. Besides that, these smell AMAZING while they are being baked. Your whole house will smell like Christmas!
