We are heading camping this weekend again (along with a MILLION other people for Labor Day) and when I asked the family what should be on the menu, the first thing the kids requested were these campfire scones. We’ve even tried making them in the oven, and they just aren’t the same so I have to admit that they aren’t the only ones excited!!
By now you probably know how much I love my Homeright Electrolight (see here and here) and it’s become a staple in the camp trailer. It makes starting a fire so easy that I can do it even while the hubby is off fishing!!
We put a bunch of kindling down in the fire pit first and then build a tower on top with some smaller pieces of wood. Then using the Electrolight I catch the kindling on fire in matter of minutes, and the smaller pieces quickly catch on fire as well. Once they start burning, we add 2-3 larger logs in a tee-pee form. Add larger logs as needed.
Once you have a great fire burning it’s time to cook your scones!!
Campfire Scones:
- Canned Buttermilk Biscuits
- 2 cups sugar
- 3 Tablespoons Cinnamon
- Oil
- Square Camp Cooking Stick
- Ziplock Bag
Start by bringing the biscuits up to room temperature which will help them stretch a little more. I usually just pull them out while we start the fire! Next put the Sugar and Cinnamon into the ziplock bag and mix until they are fully combined.
Pull out one biscuit and stretch it out a little, making it skinnier and wider. This will help it cook faster and more evenly.
Then place it in the camp cooker and close it up. Roast over the fire until golden brown on both sides. Set it on a plate to cool slightly then using a knife, spread a little amount of oil onto both sides of the scone. The place the scone into the cinnamon sugar bag and cover fully.
Serve warm and ENJOY!!
