Strawberry Crepes

Strawberry Crepes, an easy and delicious recipe for summer. Filled with any kind of fruit and topped with powdered sugar or cool whip.



Yesterday was cold and kinda a “blah” day for us at the Barker House. Ornery kids, chilly weather and no Dr Pepper for Mama made for a long and stressful day. But when The Little Man requested “dinner for breakfast”, I knew I could get on his good side by making him some yummy strawberry crepes. Boy was I right!

These are so good filled with so many different fruits. Also, PB&J is a favorite on occasion at our house.

Crepes
Ingredients
  • 2 cups flour
  • 1 tsp baking soda
  • 4 T sugar
  • 1 1/2 cups milk
  • water
  • 4 eggs
  • 4 tsp oil
Instructions
Mix together flour, baking soda and sugar in a medium mixing bowl
Then stir in milk and slowly add enough water to make the batter runny
add in eggs and oil and mix until fully incorporated

cooking

Cook in a large pan on the stove
Use approx 1/2 cup of batter per crepe. Pour into the middle of the pan, then roll the pan around until the batter spreads out to the edges.
When the batter is no longer a liquid, flip over and cook the other side.

serve

Serve with fruit, butter and syrup, or even PB&J inside and roll it up.
sprinkle with powdered sugar or top with cool whip.

And although the crepes may be too hard for the kids to eat as a whole, they will love the “squiggly pancakes” once they are cut into slices!
