Raspberry Cupcakes

Our Thrifty Ideas- Make these easy Raspberry cupcakes from a mix and frozen raspberries. Super yummy and pretty at the same time.

The other day I was asked to make dessert for family dinner. Of course I said yes, because DUH…who doesn’t love to make a good dessert. Well, apparently I shouldn’t have jumped on board so quick because I had major memory loss lately and didn’t even think about buying stuff at the store to make a dessert. So when Sunday rolled around, it was time to make the dessert……..I didn’t have anything planned to make.
So I went thru my pantry and found a white cake mix, and knew that I could mix something into it to make them extra special.
I made up this recipe, and I’m totally loving it.

Raspberry Cupcakes
 
Prep Time: 15 miutes
Cook Time: 15-20 minutes

Ingredients (24 cupcakes)
  • 1 white cake mix
  • 1 1/3 cups warm water
  • 2 egg whites
  • 1 cup frozen raspberries
  • 2 Tablespoons Raspberry Gelatin (the stuff you make to put on top of a cheesecake)
  • Whipped Frosting
Instructions
Combine cake mix, 1 cups water, and 2 egg whites into a pan. Stir until completely mixed. Thaw out 1 cup of frozen raspberries and then mash them into a liquid form. Stir into the cake batter.
Using the 1/3 water left, dissolve 3 tablespoons of Raspberry Gelatin into the water and then stir it into the cake batter.
Divide the batter into 24 cupcake liners and bake for 15-20 minutes at 350 degrees.
Let cool on the countertop. Once cooled, frost with a whipped frosting that has been tinted pink and top with raspberries!

These were a huge hit. I can’t wait to make them again. Maybe a peach flavor next time?!
