Do you ever get those neighbor/family gifts of food that just is not yummy? Each year our 83 year old neighbor hand makes fruitcake and gives us a huge old wrapped piece. We just don’t have the heart to tell her that we are yet to eat it…yuck! So for all she knows, we “love that fruitcake!”
This year we got Caramel Puffs for one of our gifts, and I had never had them before. Apparently I really liked them, because Sean had one taste of it and I inhaled the rest! SERIOUSLY – not kidding.
So Sean had to text and ask for the recipe. Little did we know it was so easy, and on the back of the bag as well! So on Christmas Eve, I had to run out and get the stuff so we could munch on it all of Christmas day. Also, the recipe only uses half of the bag, so we are going to make another batch for New Years Eve.

Carmel Puffs

Prep Time: 5 miutes
Cook Time: 45 minutes

Ingredients (8 servings)
  • 1/2 bag (appx 8 oz) Corn Puffs (found in the chip aisle)
  • 1/2 cup butter
  • 1/2 cup lite corn syrup
  • 1 cup brown sugar
  • 1 tsp baking soda
Instructions
Put corn puffs into a large baking dish (or two if you don’t have one big enough) and set aside
Melt together butter, corn syrup and brown sugar on the stove, over medium heat, until it just starts to bubble (2-3 minutes) Mix in the baking soda and remove it from the heat.
Pour mixture over the corn puffs and mix until evenly coated.
Bake in a 250 degree oven for 45 minutes, mixing every 10 minutes. Make sure to scrape and lift from the bottom to prevent burning.
