I love fresh fruit (I’m sure you’ve already figured that out), but I also have a major sweet tooth. So when I get the chance to mix the two, I’m in heaven.
I made these Raspberry and Nutella Pastry Puffs a while back, and had some extra of the filling. I could not let it go to waste, so I had to come up with another yummy treat.
It’s super easy, and great for a hot summer day.
Ingredients:
- Cream Cheese
- Cool Whip
- Vanilla extract
- Vanilla Yogurt
- Pureed Raspberries
Cream Cheese Filling
- 4 oz cream cheese
- 3/4 cup Cool Whip
- 1/2 tsp Vanilla Extract
Start by making your cream cheese filling, then set aside
Layer one layer of vanilla yogurt, then a thin layer of raspberry puree. Repeat the layers until you get to the top. Then place a dollop of your cream cheese filling and top it with a raspberry, or two.
After making this for dessert, I then had it for a midnight snack, and again after lunch the next day. The little dollop of filling is just enough to counter the tart you can get from the other two layers!
