Normally I am a “Comfort Food” person. If it gets anywhere near the description of COLD, I’m making soups, baked goods, and cuddling with a blanket and hot cocoa. But on occasion, there’s a rare day that it’s pouring down rain outside, and I decide to close the blinds and pretend it is still warm, while eating a summery treat!
Did I mention it is only 39 degrees at my house, and we even lost power because of the loud rain storm?
Yup, it’s one of those days!
So what did we do, once the power came back on? We made a fun summer picnic in the living room and played some good ol school Brittney Spears!!
We’ve been eating lots of fruit lately, but somehow today all we had were GREEN apples, and bananas. My two least favorite of all the fruits. Solution? A yummy dip to mask the flavor! Isn’t that what dip is for anyway?!
Raspberry Yogurt Fruit Dip
I made mine on a small scale, but quickly realized this would be fabulous for a cookout this summer, or a craft night, book club, or bridal/baby shower! So, I’ll give you the ratio as well as the recipe!!
1 Tbl Vanilla pudding powder
2 Tbl Cream Cheese
4 Tbl Raspberry Yogurt
Ratio 1:2:4 Take however much Vanilla Pudding Powder you are using, and double it for the amount of cream cheese. Then Double the cream cheese for the amount of yogurt.
ie 3 Tbl Vanilla Pudding Powder
1/3 cup Cream Cheese (6 Tbl)
2/3 cup Raspberry Yogurt
Throw them together and mix well. Really, mix it a little more than you think you might need to. Just because the pudding powder gives it a gritty texture if it isn’t mixed well enough. But really, that’s it!
I can’t wait to make this all summer long with different pudding flavors. Maybe a Lemon Yogurt! So fresh and creamy!

I am just like you in what you wrote in the first part of your post – I love comfort food and eating some hot soup curled up in a warm blanket! :o) This dip is such a great idea, I love the sound of it and I have all the ingredients at home so I’ll have to try it this weekend!!! Thanks for sharing!
