My M.I.L. came into town at the beginning of the month and she made some A-MAZING cookies for Family Soup night. So when I got invited to go to the cookie exchange at Jen from Tatertots and Jello's house, I knew I had to make them to share. They are perfect for the season, especially because I love any reason to add candycane to our food!

Oh, and did I mention these are "cheat cookies"? So easy, with just a few ingredients.
Double Chocolate Peppermint Cookies:
Boxed Chocolate Cake Mix
1/3 cup oil
2 eggs
Semi Sweet Chocolate Chips
Crushed Peppermint Candies
Combine Chocolate Cake Mix, oil, and eggs in a mixer and blend well. Then hand mix in the Chocolate Chips to keep them from breaking apart.
Roll the dough into large cherry size balls. Dip the top of the ball into the crushed peppermint candies and place on baking sheet.
Bake at 325* for 8-10 minutes.
These would be great for your Holiday Parties. I'm thinking I'll make them again for New Years Eve!! They would also make a fabulous neighbor gift for Christmas.
