A Birthday Wish, a Winner, a Treat, and a Sunny Day!

Today is such a fabulous day. It is my amazing mom’s B-day!!!

Ok, I know that Valentine’s Day was yesterday, but with all 3 members of my family sick, I didn’t have the time or energy to blog!!
So I figured I would post the quick treat today. This is not only good for Valentine’s day, it can be made for any and all occassions.
Really, I don’t even need a reason for Chocolate Covered Strawberries. They are too good!!
These are so easy, and you should never go and spend the money others charge for them.
I had the chocolate at home already, so to make over a dozen of them, it cost me the price of the strawberries ($3.99 at Fresh Market)
I used chocolate flavored Almond Bark (costs around $3.50 at the store).
This is something I have in my pantry at all times. You never know when you will need random dipping chocolate!
  • Wash and then dry your strawberries
  • Estimate how much chocolate you will need {I used 3 bars} and place in a microwave safe bowl that is more skinny and tall (this will make the chocolate deep rather than shallow and spread out)
  • Microwave for 1 minute, then stir
  • Place back in the microwave for 15 second intervals, stirring each time, until your chocolate is fully melted
  • Then dip your strawberries while holding the top by the stem.
  • Let the excess chocolate drip off and then place on wax paper to cool/harden
  • I then melted white chocolate {using the same method} and dyed it pink.
  • Place the pink chocolate in a decorating bag or container and pipe a design onto the strawberries!!
{YUM}
And the best part of it all, when I went in later that night to clean up, I found this wonderful message my husband had left written with the chocolate!

I had to share our celebration of the fabulous weather! I know it is supposed to start snowing again tomorrow night, so although William and I are still slightly sick, we headed to the park for some outside time!

Do you see the grin on his face? He was chasing his own shadow and laughing so hard at himself! Everytime he got facing the wrong way to the sun and his shadow was behind him, he would start to spin in circles to find it!
This picture officially made up my mind that it is time to cut the curls {sad day}
So I have an appointment to get his hair cut tomorrow afternoon. No, I don’t trust myself to do it, so we will be having the same person that does my ahir do his. She has a little one with the same curls, so I’m hoping she can salvage some curls!
Also, tomorrow I have my targeted ultrasound!! We are so excited. The baby is SO active, and Sean has already been able to feel it move multiple times.
William has also realized the concept of a baby in mom’s belly, and he gives it kisses hourly!!
At my last appointment, the doc said she was 89-95% sure of the gender, but tomorrow we will be 100%! This is sure to be one of the best visits yet
