Sometimes life gets busy, time gets away from me, and I fall into MAJOR routine which usually results in either PBJ or drive thru for lunch. I hate when I get stuck in these routines because it’s so not healthy for me, and I know that if I do just a little bit of planning ahead of time, I can have a totally delicious AND healthy lunch each day of the week. This last week I decided to take control and while I was at Walmart, I actually stocked up on some great ingredients that will help me have delicious meals, and this Grilled Chicken Chop Salad has become TOP OF THE LIST.

Grilled Chicken Chop Salad

Ingredients:

  • Baby Spinach
  • Romain Lettuce
  • Fresh or frozen corn
  • Fresh Tomatos – chopped
  • Black Beans – rinsed and dried
  • Tyson® Grilled & Ready Chicken Breast Strips
  • Avocado – chopped
  • Wish-Bone® Regular Italian Dressing

The best part of this salad is how simple it truly is. I start by putting my lettuce & spinach in the bottom of a large mixing bowl that has a lid. Then I layer on all other ingredients, and pour about 2 tablespoons of the italian dressing over the top. I then place a lid over the top of it and give it a good ol shake to mix the dressing into the salad and stir all the veggies together. Another fantastic way to get the flavor popping is to marinate all of the veggies/beans together for about an hour in your italian dressing, then layer it on top of the lettuce/spinach mix. The flavor will definitely be amazing….but that’s only if you actually plan lunch an hour ahead of time…..which I very rarely do!
