You guys, I am so excited for today’s post, because in all honesty it is a recipe that I completely forgot about, and haven’t had for about 12 years. My mom made them all the time when I was growing up but I haven’t even made them since I’ve been an adult. So when coming up with a fun recipe for today and knowing I wanted something Apple Cinnamon flavor to compliment the new Quaker® Real Medleys® Yogurt Cups (I’ll talk about those later!) these muffins were the first thing that popped into my head. I immediately asked my mom the recipe, went out and bought some apples (ok, I may have gone apple overboard!) and made them that night. My whole family inhaled them and I didn’t even have a chance to photograph them for the post before they were gone. So in the last few days I have already made these 3 times!

Not that I’m complaining, because not only are these so yummy but they make my house smell divine while they are baking!!!

Ok, so now I wanted to talk to you about why I love muffins. You see, I LOVE breakfast. Like if I could have bacon, eggs, sausage, toast, fruit salad and pancakes each and every morning i WOULD! But for the sake of my waistline and my time, I am trying to think ahead, plan ahead and create easy/quick breakfast ideas that I can both fill up with and actually enjoy (I don’t want any of those flavorless foods!).

Apple Cinnamon Muffins
 
Ingredients
  • 1 egg
  • 1 cup milk
  • ¼ cup margarine melted
  • 2 cups flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 granny smith apple, peeled & grated
Instructions
  1. Mix all ingredients in bowl with a fork. Spray 12 muffin tins with nonstick spray. Fill each cup with equal amounts of batter
  2. Cook at 400• for 20-25 minutes

I make muffins ahead of time, usually the night before, and then they are ready for a quick breakfast the next morning.
