Summer night BBQ

This weekend was so much fun. We had tons of family in town for the holiday, and of course FIREWORKS!! I’ve said it a million times, but 4th of July is my favorite. I love the happy feeling in the air, being with family and all the good food that comes along with the holiday. On the 4th we had a big party BBQ with everyone who was in town, and I was so excited to use my #1 favorite thing in the world as the theme; Dr Pepper!!! I had just purchased a bunch on sale at Walmart, so I knew this would be perfect!

We started out the dinner with Dr Pepper pulled pork sandwiches. They were SO YUMMY and definitely the hit of the meal. And the best part is that it cooked in the crockpot all day, so I got to play and enjoy the day without worrying about dinner.

Dr Pepper Pulled Pork Sandwiches
 
Ingredients
  • 3 lb Pork Shoulder Roast
  • Salt & Pepper
  • Onion Salt
  • Season Salt
  • 1 12 oz can Dr Pepper
  • Favorite BBQ sauce
Instructions
  1. Place your roast inside a crockpot. Sprinkle salt & pepper, onion salt and season salt over the top and then aggressively rub it into the meat. Then pour the Dr Pepper into the bottom of the crockpot. Cook on low heat for 8-10 hours
  2. Remove the roast from the crockpot and dump out the juices. Shred up the whole thing and then stir in the BBQ sauce. Return all the shredded pork into the crockpot to keep warm until serving.
  3. Serve on a bun with extra BBQ sauce to top

I made the whole meal super simple by not needing to prep anything else that we had with our pulled pork sandwiches. Served it with easy sides like these Cheez-It crackers.

And of course, my Coleman cooler was stocked full of chilled Dr Pepper cans to drink.

But the highlight of the whole night was the dessert. You guys, I can’t even explain the amazingness of this stuff. I’m pretty sure that angels sang the moment it touched my lips!

**UPDATE** I had many saying they couldn’t find coconut gelato at their store, so I came up with a homemade coconut ice cream recipe!!!! You can all thanks me now!

Homemade Coconut Ice Cream - you can make this amazingness at home and without an ice cream maker

I found coconut gelato at my local grocery store and knew that I had to come up with a recipe for a dirty Dr Pepper float. I drink a DDP all the time, but turning into a float is seriously amaze-balls. Like seriously! After adding the gelato into the glass, I put a little fresh squeezed lime juice and then put a few slices in the bottom for a bit more of a punch.

Slowly pouring the chilled Dr Pepper over the gelato the lime juice was brought to the very top. So as you pour, make sure to stir that lime back down into the glass.

You can top the whole thing with toasted coconut if you want, but it is seriously perfection just how it is…….PERFECTION I tell you.

    I have to make all of the Dr Pepper recipes, I am a diabetic but I have told my doctor I can’t handle the diet so I work around it, but still drink many. Has been my favorite drink for a good 35 years! Thanks for the recipes will look forward to more
