Colds, Coughs, Sniffles, Flu and more OH MY. I’m 100% sure that all parents fear those words. There’s nothing worse than when it hits your house. It starts with one person, spreads to a sibling and soon enough every one in the family has it and is miserable. I was lucky enough this year to get sick on vacation (no really, I count myself lucky) because I was at my parents house. They could help with the kiddos, make the food and I got to just get better. But unfortunately, most of the time, that is not the case. When a parent gets sick they are usually required to still be “Mom” or “Dad”; keeping the house in order (or at least from falling down). But I think the worst is that they still have to feed the family. They have to make sure that nobody starves.

I try to be able to help any neighbors or friends that I know are sick. Trying to ease any part of their load when sick. Like dinner….taking them some dinner is a simple way that you can help that Mom or Dad who’s not feeling well. So today I thought I’d share a yummy recipe that is perfect for a sick day (or just a really cold day). And if you have some leftover turkey from Thanksgiving that you froze, this is a perfect way to use it up! If you don’t have turkey it is amazing with cooked chicken as well.

Turkey Chowder - the perfect recipe for a cold & dreary day (or a sick day)

Turkey (or chicken) Chowder

Ingredients

2 Turkey (or chicken) breasts - cooked and shredded
1 cup carrot - chopped
1 cup celery - chopped
1/2 cup onion - diced
1 cup potatoes - peeled and chopped
For the rue
3/4 cup butter
3/4 cup flour
1 quart half & half (can use milk if you don't have half & half on hand)
salt & pepper to taste

Instructions

combine all vegetables in a pot, then fill with water 1 inch over veggies. Boil until all veggies are soft.

In a large saucepan melt the butter over medium heat. Mix in the flour til well combined. Then whisk in the half & half until well incorperated, and continue whisking until the mixture thickens. Salt & Pepper to taste.

Pour the rue mixture into the veggies and stir well.

Serve with shredded cheese if desired

One of the other worst parts of getting sick, IMO, is when you don’t have the “supplies” that you need. Have you ever been sick and completely run out of Kleenex? I’m sorry, but it’s just not the same when you have to settle to have the TP roll next to you. I would much rather have my box of Kleenex, and my piles high of used tissues!

  2. This chowder looks delicious! The perfect thing for my leftover turkey. I had to use milk instead of half and half for the roux, but it was still yummy. Thanks for sharing!
