You guys, I absolutely love peaches, and fresh peaches off the tree make me super happy. I got to go to my parents and stock up on some from their tree, which are so sweet and amazingly yummy! I may be slightly obsessed with them for a few weeks. That is allowed right?!

So of course I had to make a couple yummy peach recipes desserts.

Caramel & Peach Crumble
Recipe type: Dessert
 
Ingredients
  • 10 T Butter
  • 1 cup flour
  • 1 cup brown sugar
  • 1 cup oats
  • 1 teaspoon soda
  • ¼ teaspoon salt
  • 8oz Cream Cheese
  • ⅓ cup whipping cream
  • ¼ cup sugar
  • 1 tablespoon caramel syrup
  • 1 cup sliced peaches
Instructions
  1. Bring butter to room temperature. In a medium bowl, combine all ingredients for the crumble. Cut the butter into mixture using a fork or pastry cutter. Sprinkle half of the mixture into an 8x8 greased pan and bake at 350 for 10 minutes.
  2. In a small bowl, whip the cream until fluffy. In a medium bowl combine cream cheese, sugar and caramel syrup until well blended. On slow speed, mix the whipped cream into cream cheese mixture.
  3. Spread onto the baked crumble then top evenly with the peaches slices. Then top it off with the remaining crumble mixture and bake for 10-15 minutes.

Serve warm and it is really great drizzled with caramel sauce. You guys, I almost ate this whole thing on my own. Luckily I did have my husband there to eat a couple bites…so I did’t eat the entire thing!
