Chicken Taco Chip Dip with Classico Canned Tomatoes #CookClassico



I’m a huge football fan. If it weren’t for my kiddos, I would most likely sit and watch it all weekend with the hubby! Unfortunately there’s not that much “Mommy Time” in the day, so I only get to catch it when possible during the season. But when it comes time for the Big Game, I make sure we go all out.
What’s the best part of the Big Game (besides the commercials)? Of course, the food!
So this year I headed out the day before (which was a bad idea, btw, don’t go shopping that night) to do some grocery shopping at Walmart. Did you know that Classico has canned tomatoes? and not only that, but YUMMY ones! And they are 100% all-natural with no preservatives!

I grabbed myself some of the Classico Pear tomatoes and knew just what I wanted to make with it for our party; Chicken Taco Dip.

Chicken Taco Chip Dip

Prep Time: 5 minutes
Cook Time: 3-8 hours

Ingredients (8 servings)
  • 3 frozen chicken breasts
  • 1 28 oz. can Classico Whole Pear Tomatos w/ fresh basil – sliced into bite size pieces
  • 1 cup frozen corn
  • 1 4 oz. can green peppers
  • 1 15.25 oz. can kidney beans
  • 1/2 package taco seasoning
  • ground pepper and garlic powder to taste
  • 1 1/2 cups cheese
  • sour cream
  • tortilla chips
Instructions
Place frozen chicken in crockpot. Pour all other ingredients on top of the frozen chicken, then add pepper and garlic salt to taste.
Cook the crockpot on high for 3-4 hours or low for 6-8 hours.
Once it is fully cooked, strain excess liquid and place dip ingredients in a baking dish.
Top it off with cheese and bake at 350 degrees for 10 minutes until cheese if fully melted.
Place cream cheese on the top and serve with chips.

So not only was the game a huge hit yesterday, but so was the food. There is just a bit of the dip left, and I’m thinking that I will make a taco with it for lunch tomorrow! What a great multi purpose recipe, right?!

The dip was such a huge hit. Everyone loved it, and it was even easy finger food for the littles to eat.
