Homemade Egg McMuffin

I am in love with Egg McMuffins. If I am out and about before 10am, I usually can’t help myself, I stop and buy myself one.
I’ve always wanted to make my own at home, but couldn’t figure out how to make the eggs just right. Just the other day a friend informed me it’s SO easy to make them. You bake them!
Really?
I never would have guessed!
These are so simple and just as yummy, if not better, than if you were to buy them. You can even freeze them for an easy breakfast later.
  • English Muffins
  • Large Eggs
  • Thick Sliced Ham
  • Cheese
  • Butter
Butter the sides of a muffin tin and crack one egg into each spot. Bake the eggs at 350 for 15-20 minutes.
While mine were baking, I decided to cut my ham to size. I just used a cookie cutter that was about the same size as the english muffins.
Toast your english muffins, and once the eggs are done baking, put together your breakfast sandwich. Muffin, Egg, Cheese, Ham, Muffin.
ENJOY!
And if you want to freeze them for later enjoyment, place them on a cookie sheet or plate and put them in the freezer for about an hour. This will freeze them enough to avoid all moisture and condensation in the packaging. Then wrap in foil, plastic wrap, or freezer paper, and place in a freezer safe bag.
When you want to heat them up, place them frozen into a 350 degree oven for 15-20 minutes. Easy Peasy!

  2. This probably isn’t as yummy but when you have less time we often put our eggs in a greased mug and scramble slightly and put it in the microwave for about 45 seconds. They fit perfectly on an english muffin and you have several ready in just a few minutes.

  3. i made my husband a bunch of these and also frozen burritos. its such a money saver. never thought of the ham though, i bought sausage circles and used that.

    my 8 year old loves to make her own eggs in a cup in the microwave. she even adds cheese and ham if its already cut up.
