Double Chocolate Peppermint Cookies

My M.I.L. came into town at the beginning of the month and she made some A-MAZING cookies for Family Soup night. So when I got invited to go to the cookie exchange at Jen from Tatertots and Jello’shouse, I knew I had to make them to share. They are perfect for the season, especially because I love any reason to add candycane to our food!{By the way, the Cookie Exchange was amazing!}

Oh, and did I mention these are “cheat cookies”? So easy, with just a few ingredients.
 
 
Double Chocolate Peppermint Cookies:
 
Boxed Chocolate Cake Mix
1/3 cup oil
2 eggs
Semi Sweet Chocolate Chips
Crushed Peppermint Candies
 
Combine Chocolate Cake Mix, oil, and eggs in a mixer and blend well. Then hand mix in the Chocolate Chips to keep them from breaking apart.
Roll the dough into large cherry size balls. Dip the top of the ball into the crushed peppermint candies and place on baking sheet.
 
Bake at 325* for 8-10 minutes.
 
                                                                                                                                   
 
These would be great for your Holiday Parties. I’m thinking I’ll make them again for New Years Eve!! They would also make a fabulous neighbor gift for Christmas. So I took the liberty to make you a recipe card to print out. It’s sized to a 5×7. You can attach the recipe card to a plate and deliver it to your closest friends!

Vanessa I just “found” your blog – what a horrible word Blogg sounds almost like a bogg -being stuck in the mud with a four wheel drive car I just read about you & also pinned your 3 Ingredient Peanut Butter Fudge I absolutely LOVE Peanut Butter I eat the smooth stuff by the spoonful Have you ever made your own? I have made Macadamia Nut Butter I do not know if I did it right All I did was Process the Macadamia nuts with a little bit of oil just to get it going Next time I will not use oil – too runny Down in Sydney Australia we are about to have a very hot Christmas as usual YUK I did have the pleasure of having 7 White Christmases when I lived in the US (my 1st snow was in Syracuse New York- AMAZING) After having a White Christmas it just does not feel the same in the extremely hot weather I hope you will have the pleasure & share the joy of being able to show your 2 “babies” snow for the first time Make sure you take lots of photos/video I read about how lucky & blessed you feel with your hard working husband & 2 girls Yes Vanessa YOU ARE VERY LUCKY especially with your soul mate being such a good man. I realize now that both my POLISH parents have passed on. HOW LUCKY I WAS They did not have much after the war when they moved to Sydney Australia & they went without for my sister & me My Dad was such a soft hearted man who worked 7 days to provide for my Ukraine Mum & his 2 daughters He actually worked 6 days & on the 7th built a house from the ground up The only thing Dad did not do was the electrical work I remember being a child of 6 & helping with the sanding of the doors & framework I am sure I was more a hindrance It took my darling father 6 years to build our big Brick Home with a big block of land we had fruit trees. Hens, rabbits ducks A major big Vegetable garden That was the European in them I guess Dad also had bees & until you have eaten home grown HONEY You haven’t had honey in the real sense Your hubby sounds like my father You are lucky Vanessa I have now been with my partner for 32 years Sure there will be times when you wont see eye to eye But hang in there If there were no squabbles you would not be happy Sorry I get carried away Vanessa I hope you have a wonderful Christmas & a productive & HAPPY NEW YEAR for 2013 I was lucky in that I inherited ny late Mum’s excellent cooking skills & her great palate does that make sense- palate? Sorry Vanessa I thought you had 2 girls WHY I DO NOT KNOW especially when you said you have a “monkey” boy I was not blessed with human children BUT we have 2 of the smartest & cutest Toy POODLES Tiffany is now 5 she is Black & Billie will be 2 years in May 2013 she is cream in colour Regards Barbra
